It’s good to create something that tastes delicious and that people like to eat. But my motivation is about the moments before it is confirmed delicious. I have found, since I have been doing this, that the most enjoyable part of the whole process – and in actual fact, my main motivation, though I didn’t realise it when I started it – is the moment that the client sees the cake: the smile that my products put on people’s faces.

There’s no doubt, it’s a great feeling to craft something that people enjoy eating. However, my primary incentive is in the reaction before people start to enjoy the eating: I have discovered, since day one, that I find the most enjoyment in the instant that the client sees the finished product. Responses differ, but they have all been of varying forms of delight. The moment the cake is unveiled is undoubtedly my favourite part of the process, and as such, I will always endeavour to make the delivery, or be there for the collection, myself.

I love it when people’s reaction is that they “can’t possibly cut into it”. I made one cake where the clients ordered it for no other reason than the sheer love of cake. There was no occasion: they just wanted cake. Upon delivery, there was actual salivation at the prospect that they would soon be eating cake. And then, when I removed the box lid, they loved it so much that they couldn’t bring themselves to ‘ruin’ it by slicing and eating it. That’s very satisfying, and very endearing. However, the bottom line people, is that it’s cake, and it’s yum, and it’s meant to be eaten.
